What is evaporated milk?
It is a milk concentrate that can withstand long periods of storage, due to the evaporation of 60% of the water in raw milk.
It receives other names; in fact, its real name is partially evaporated or semi-evaporated milk, since the water is partially removed, but not completely (for example, powdered milk is completely removed).
There is a sweetened version, known as condensed milk, which can still last longer, so it is usually more commercial than evaporated milk.
It has many uses in the kitchen, especially in baking, and it can also be an excellent substitute for cream, as it contains many saturated fats, few vitamins and minerals. That makes evaporated milk a much healthier and recommended option.
Another reason to use this milk is that it will give the dishes a more accentuated flavor and a better texture, without losing the nutritional properties of the milk.

How to prepare it?
The only ingredient you need is milk. The portion you need will depend on how much evaporated you are going to need. Of course, for 1 liter of milk, you will get 400 ml of evaporated milk.
- Place the milk in a pot of suitable size. Stir over low heat and preferably with a wooden spoon to prevent the cream from forming.
- Carefully turn the heat to full power, so that it comes to a boil as soon as possible and achieves the desired result.
- When it starts to boil, lower the heat again, before the milk can come out of the pot. Stir the milk occasionally for an hour. It may take a little more time.
- After this time, check that the milk has been thick and of a darker color, due to the loss of water.
- Remove from the heat and pass the milk through a strainer to remove impurities.
