Tenmillo tacos recipe with cheese crust and esquites


  • 10 good-size corn tortillas freshly made
  • 800 g of good quality tenmillo, in steak
  • 200 g of Chihuahua cheese
  • 2 tbsp. lard
  • Salt and pepper

For the esquites:

  • 100 g of cooked white corn kernels
  • 200 g of white onion filleted
  • Olive oil
  • Butter
  • 1 pinch of cayenne pepper
  • Juice of 1 lemon
  • Salt and pepper

For the roasted peanut chile de arbol sauce

  • 8 arbol chiles, seeded, chopped and toasted
  • 100 g of roasted and finely chopped peanuts
  • 2 garlic cloves, marinated and minced
  • 150 ml of avocado or corn oil
  • Salt and pepper

For the tacos:

  1. First, spread the tenmillo with the butter and season. In a very hot comal, seal them on both sides, leaving them juicy and tender. I like to cook them on a charcoal grill: it will give it a better flavor. Cut into squares and reserve.
  2. Meanwhile, with the grated cheese, form discs of about 7 cm in diameter. Brown them on a comal, lift them with a spatula and reserve. They should be golden brown on one side, taking care that they do not burn.

For the esquites:

  1. Next, in a frying pan with olive oil and butter, add the filleted onion, acitrona and add the previously cooked corn kernels. Sauté for a while and add a little cayenne pepper. Salt and pepper and turn off the heat. Add the drops of lemon juice and reserve.

For the chile de arbol sauce with peanut:

  1. On the other hand, in a skillet over medium-low heat, put the avocado or corn oil, include the garlic followed by the peanut and brown a little, taking care not to burn. Finally, salt and pepper and reserve.

For the assembly:

  1. Take your warm tortillas followed by the cheese crusts, the minced tenmillo meat and top each taco with the esquites.
  2. Finally, you can add avocado slices to each taco and remember the chile de arbol sauce with peanuts – it will be a great taste experience!
