We let it rest in the fridge for 30 minutes.

After the rest, add one more splash of cold water and beat again. In a wide frying pan or better in a paella pan, add abundant extra virgin olive oil and wait for it to heat up. Then, with a saucepan, we add small portions of our dough and wait for it to set., turning them so that they brown on both sides.
