How we like spoon dishes these days, it is a joy to temper the body with a stew or this Red lentil puree with squid. It is ideal as a single dish, since it covers many nutritional needs, then a soft and digestive dessert and we have energy for a few hours.

The ingredients (4 people) 300 grams of peeled red lentils, 1 liter of ham broth, 1 large leek, 4 cloves of garlic, 220 milliliters of evaporated milk, 1 teaspoon of cumin, 1 teaspoon of turmeric, 2 teaspoons of chorizo ​​pepper meat , black pepper, some fresh coriander leaves, 4 small squid, a splash of white wine, chopped parsley, olive oil and salt.

The preparation
Peel and chop the leek and three cloves of garlic. Put a good jet of olive oil in a casserole and put it to heat, fry the leeks and garlic for a minute and add the lentils, sauté all the ingredients for another two or three minutes.

Then add the chorizo ​​pepper, turmeric, cumin, black pepper and salt to taste, mix well and pour with the hot broth (if you want it less thick you can add more quantity), move with a wooden spoon, pour in the milk evaporated and mix again.

Cook for about 15 minutes over medium-low heat. After this time, add the chopped cilantro and leave a few more minutes. Remove from heat, pour a drizzle of olive oil and blend, reserve hot.

Clean the squid and cut them into rings, fry them in a frying pan with oil along with the remaining garlic, parsley and a splash of white wine. Room to taste and reserve.

Serve the red lentil puree on the plates and arrange some squid rings, a last touch of olive oil on the plate (optional) and ready to eat.

The flavor is exquisite, it would also be ideal to accompany it with a few cubes of toasted bread to provide a crunchy texture. Try it, you will repeat.
