Recipe for angel hair, or citron candy

The angel hair or citron fudge recipe I bring you today, it is for me a true jewel, since it is one of the oldest memories I have of my grandmother’s old, great and magical kitchen. The first time I participated in its elaboration, when I was 4 years old, I thought that there was magic in the hands of my mother and my grandmother, and in a way I was not wrong.

That is why this recipe I dedicate it to you, Mom.

Ingredients, to obtain 5-6 jars of 250 gr.

1 cider squash of 3 kg, the zest of 2 lemons, 1.5 kg of sugar.


We wash and dry the citron, put a clean cloth on the ground and smash it against it (its skin is very hard), until it breaks.

We put the pieces of citron, with the skin down, in a large pan with water, little, just enough so that it does not burn, to cook for 20 minutes, or until when pressing its meat this yields.

We take it out and let it cool to be able to handle it, at which point we chop it up.

Once chopped and stripped of seeds and skin, we put it in a saucepan with the sugar, over a low heat, stirring often, for 50 to 60 minutes.

We already have the angel hair done, now, hot, we mix the lemon zest and pack it in sterilized jars and, we make the vacuum, for this we place them in a pot with water and a cloth at the bottom, which reaches them under the lid, 20 minutes from the start of boiling.

During my earliest childhood we ate angel hair, mostly with bread, for breakfast and snacks. On some occasions my mother made exquisite dumplings with it (I’ll tell you about it), and she used it as a filling in different candy stores.

Whenever I make “boats” of this angel hair or citron fudge recipe or anything else, I have a habit of giving some to my friends, for me it is a way of expressing to both (friends and food) my love and gratitude towards them, it is something that I learned from my mother and acquired along the way Too bad that such beautiful customs are not more widespread!
