We put the oven to preheat to 200 ºC. While it is heating, we wash the potatoes and taking advantage of while they’re still wet season them with salt and pepper and wrap them in aluminum foil.
We put them in the oven. To get an idea, the small potatoes will need 35 minutes in the oven. The medium ones about 45 minutes and the big ones 1 hour. To see if they are already done, we can put one skewer and assess the resistance offered by the potato.
Once roasted, we leave them stand for about ten minutes so that they cool down a bit and finish cooking with the residual heat. Then we open them and give them a longitudinal cut. In the cut we add a tablespoon of creme frâiche and a little chopped chives.
