It is clear that they are two very different recipes. This bread is characterized by having a very thin crust and not at all crunchy and by being very crumb, soft, fluffy and thanks to the poached onion with a slightly sweet touch.
The best recipes to enjoy CARAMELIZED ONION
Ingredients for 4 people
- 250 g of medium strength flour, 100 g of onion, 15 g of butter, 5 g of salt, 115 ml of water and 12 g of pressed yeast.
Preparation of onion bread
The first as always the clarifications. To get a medium strength flour at home we can mix half strength flour and half ordinary flour. In addition we can also add about 40 gr of sourdough.
Well, we chop the onion finely chop it and put it to fry with the butter without turning any color. Then we will let it cool.
Once the onion is cold, knead all the ingredients. Either by hand, forming a volcano with the flour or in a machine slowly. We knead for about 5 minutes until we obtain an elastic dough that comes off the walls or the work table.
Let the dough rest for about 10 minutes.
Later we divide the dough into the portions that we want and we fry them. That is, we give each portion of dough a round shape and let it rest for about 5 minutes.
We shape each portion. I have given it a round shape, slightly flattened and then a cut lengthwise with the scissors. We moisten with water and let it ferment for half an hour.
Cook in a preheated oven at 180 ºC until golden brown. The time depends on the size of the bread, for example pieces of 40-50 gr have taken about 15-20 minutes.
The onion bread This weekend we have accompanied him in a light and varied meal, a salmorejo and some appetizers. There is also leftover for breakfast and is great spread with cream cheese and an apricot jam. Also before fermenting we can add some poppy or sesame seeds on top and it looks great.
