We grate the peeled carrot and clean it with a fine grater. We place it in a bowl together with the oat flakes, the ground almond, the ground cinnamon and the baking powder. We mix well. Add the egg, the agave syrup and the vanilla essence. Mix again until homogenized.
Next we beat the egg white until stiff. We incorporate it to the previous mixture little by little and stirring with enveloping movements. We take portions of the dough and place them on a baking tray lined with greaseproof paper, slightly crushing. Cook in the oven at 200ºC, with heat up and down, for 15 minutes. Let cool on a rack before consuming.
