We cut the onion into rather thin rings. We poach them over low heat in a pan with plenty of extra virgin olive oil. We drain well and reserve while we make the liver.
We cut the liver fillets into irregular pieces of the size that suits us. We spread them with the garlic clove, peeled and cut in half. We salt and we batter in breadcrumbs. We can also make a parsley and garlic mash and spread the fillets if we want to give them more flavor.
We fry them in olive oil, drain and place in a saucepan. We put the poached onion on top and sauté the whole for three minutes. We serve immediately.
