The original recipe had much more sugar, like one hundred grams, but it seemed excessive and I reduced it to two hundred and forty grams, which is already more than enough because the result is not at all as acidic as I initially feared. The proportion of the ingredients is completely balanced.
We start by putting the sugar, the eggs and the grated skin of the lemons in a large bowl and we beat everything until a creamy mixture. In another bowl we sift the flour, yeast and salt. In another bowl we mix the milk and the vanilla extract.
To the mixture of sugar and eggs we add a third of the flour mixture and beat well, then we add a third of the milk mixture and beat again. We repeat this operation two more times until everything is incorporated and mixed. We beat at top speed until mixture is light and fluffy.
We lower the speed of the mixer and pour the melted butter little by little, beating until fully incorporated. Pour the mixture into a buttered mold and bake it for an hour and a quarter at 170 ºC or until it comes out clean with a needle.

Afterwards, we raise the temperature and let the liquid boil until it is reduced by half and has acquired a syrupy consistency.
