We start preparing the ingredients by cutting, after cleaning them well, everything into small pieces. In a saucepan with a little olive oil, sauté the onion and leek until they are soft. The more we toast them, the more color our broth will have later.
Then we add the rest of the greens and vegetables and sauté them for another five minutes. Add the water and bring to a boil. Optionally, we can add some aromatic herbs and a bay leaf. When our broth is cooking, let it boil for 20 minutes over low heat.
We turn off the heat and strain well to obtain a broth full of flavor. The vegetables, do not throw them away because they will come in handy to make creams or vegetable purees. The broth is ready to enjoy in soups, stews and other recipes, but if you are not going to use it soon, it is best to freeze it in airtight jars.
