Homemade custard. Easy and simple dessert recipe

22 mayo, 2021

My mother was never a great pastry chef, but I well remember the excitement that the smallest of the house entered when she dared to treat us with one of her desserts. In their traditional repertoire, their delicious custards have always shone, whose simple aroma fills me with childhood memories. Perhaps that is why I had not encouraged myself until recently to prepare my own homemade custard, but the truth is that they are so easy, and they are so delicious, that it is worth recovering typical recipes like this one.

The elaboration is very basic and can be adapted to taste of each one, because like all traditional recipes in each house they are prepared with a different touch. With more sugar, regardless of the cinnamon or vanilla, more or less thick … If you have never made custard, it is best to try a base recipe and try your own modifications from then on.

Place the milk in a saucepan with the cinnamon stick, the vanilla bean that we will have opened with a knife and the lemon rind – only the yellow part -. Heat, bring to a boil and remove from heat. Let infuse 15-20 minutes and strain.

Arrange the egg yolks with the sugar in a bowl and beat with a whisk. Add the cornstarch, beat well and add the milk little by little, mixing with the rods to leave a homogeneous texture.

Heat a container in a bain-marie and add the preparation. Heat, without the water coming to a boil, stirring constantly with the rods, so that it does not stick. Continue cooking for about 10 minutes or more, until thickened. Remember that when hot the mixture will always be more liquid than when it cools.

Custard Steps

Fill the containers that we like the most and let it warm a little. Place a cookie Maria carefully on top of each serving and take to the fridge. Let cool completely for a few hours before serving.

With what to accompany the homemade custard

The homemade custard they are a delicious classic dessert with which to conclude a meal that few can resist. We can also serve them at snack time, with a little extra ground cinnamon, if desired. They do not need anything else to accompany them, although I like to have them with a cup of coffee alone on the side.
