We add the milk to the glass and we cook the mixture, programming the robot for 10 minutes, 80º C and speed 2. Add pepper and nutmeg to taste and mix for 5 seconds at speed 5. Let it cool down before storing in the fridge until ready to use. The sauce will thicken with standing.
To prepare this sauce in a traditional way, without Thermomix, We grate all the cheeses and place them in a saucepan with the milk. Heat over low heat and stir from time to time while we wait for the cheeses to melt and blend. Add pepper and nutmeg to taste and that’s it.
