We start with the pesto sauce, which is made by grinding the ingredients in the mortar until obtaining a paste, to which we will give a somewhat more fluid texture by adding olive oil. If you want you can do it with the blender. You can use walnuts instead of pine nuts and a mixture of green leaves -rucula, parsley, etc- if you do not have fresh basil. We will use only 50 g of the sauce and save the rest for other uses.
