Baked salmon

  • Ingredients for two people: 1 squid, 1 onion, 1 tomato, 1 clove of garlic, 1 pot of cooked chickpeas, extra virgin olive oil and 300-400 ml of fish stock.

  • Elaboration: Cut the squid into pieces, chopping the body into rings or rings, the fins into small pieces and leaving the tentacles whole because they give an original touch to the presentation. Heat a little oil in a saucepan and fry the onion, tomato and garlic, all of them finely chopped, for a few minutes over low heat. When they are tender, add the squid, mixing all the ingredients and letting the whole cook for five or six minutes.   • Ingredients for two people: 1 medium fillet turbot (or other white fish), 2 potatoes, 1 sweet onion, 200 ml of liquid cooking cream, ground black pepper, salt, extra virgin olive oil and fresh parsley (optional).

  • Elaboration: Preheat the oven to 200º C and grease a dish with a little oil. Wash and peel the potatoes. Cut into thin slices, less than half a centimeter thick. Peel and cut the onion into thin strips. Cut the fish into tacos. Line the bottom of the dish with a layer of potatoes. Salt and pepper and distribute over 3/4 of the onion. Place the turbot, season and cover with the rest of the onion. Finish with a layer of potatoes. Season and cover with the cream. Place on a rack in the lower part of the oven. Bake for about 55-60 minutes, lowering the temperature to 180º C after 10 minutes. Serve with one more hit of freshly ground black pepper and chopped fresh parsley.

  • Ingredients for four people: 1 whole chicken of approximately 1.8 kg, 1 lemon, 1 onion, herbs to taste (basil, thyme, rosemary, etc.), 10 g of lard and 3 garnish potatoes.

  • Elaboration: Season the chicken inside and add half an onion, half a lemon and a good branch of each of the fresh herbs (to perfume the chicken while it roasts). We prepare a “bed” with potatoes cut into thick slices and onion cut in julienne, arranged on a baking tray. On the potatoes we also distribute some aromatic herbs to increase their presence. On that bed we put the chicken, smearing its exterior with lard to achieve a spectacular flavor and color. On top we put some leaves of thyme and rosemary and put it in the oven, preheated to 190 ºC. We roast for 80 minutes, turning the chicken every 20 minutes so that it browns all over. At the end, we au gratin for 5 minutes to give the dish that nice final color. When turning the chicken, we remove the potatoes so that they are also done everywhere.

  • Ingredients for two people: 450 g of beans, 1 tablespoon of extra virgin olive oil, 1 packet of Asturian compango (chorizo, blood sausage and bacon), 1 bay leaf, saffron, water and salt.

  • Elaboration: Soak the legumes for a minimum of eight hours. Drain and introduce the hydrated beans in the pot, together with the compango. Add the oil, the bay leaf and a few saffron threads (any of these two ingredients are, in any case, dispensable) and cover with water, a finger above the legumes. Cover the pot and set the low temperature for seven hours. Taste and season if necessary before serving.

  • Ingredients for two people: 1 pizza dough, 3 tablespoons tomato sauce, five cheeses (mozzarella, gorgonzola, cheddar, goat cheese and emmental) and dried oregano.
