We preheat the oven to 200ºC. We beat the butter with the sugar in a bowl, with a wooden spoon or electric rods. Add the grated carrot, beat again and add the dry ingredients: flour, vanilla essence, salt and yeast.
We mix well until everything is well integrated. We take small portions of dough and form balls that we will deposit on a baking tray covered with baking paper. Finally, we bake 15 minutes or until the cookies are golden brown.
