We preheat the oven at 180º C, with heat up and down.
Heat the milk with the sugar and add the lemon peel. When it reaches the boiling point, remove and let it cool down for a few minutes. Meanwhile we peel the bananas, the mash with a fork inside a large bowl. Add a tablespoon of lemon juice, the eggs and beat until smooth.
Little by little we add the milk, passing it through a strainer and stirring at the same time. Cover the base of the flaneras with a little caramel, fill with the flan mixture and cook in the oven for 18-20 minutes or until firm. Let cool, better if it is in the fridge, before unmolding and serving.
With what to accompany the banana flan
We can go for the classic and traditional and accompany the banana flan with a little chantilly cream or sweetened whipped cream, a scoop of ice cream and a few pieces of fresh fruit. However, we like them as is, without frills. You do not need anything more than the desire to enjoy a sweet bite and that’s it.
