I had a long time without making muffins, so mixing a couple of recipes these days I made these banana oatmeal muffins They were a success and I say they were because there is not one left.
The ingredients: 2 ripe bananas, 1 cup sugar, 2 eggs, 2 cups flour, 1 cup rolled oats, 1/3 cup corn oil, 1 teaspoon cinnamon, 1/2 teaspoon cardamom , 1 teaspoon of vanilla essence, 1 teaspoon of baking powder and 1/2 teaspoon of baking soda.
The preparation: In a bowl, mash the bananas, it can be with a fork or with a masher, add the sugar, the eggs, the corn oil and the teaspoon of vanilla and mix well with an electric mixer.
Then, in another container, mix the sifted flour, baking powder and baking soda, add the oat flakes, cinnamon and cardamom.
Subsequently, the dry ingredients are joined with the wet ones and it is finished beating until everything is well mixed.
The mixture is distributed in a previously greased muffin tin and placed in a preheated oven at a temperature of 180ºC for about 20 minutes or until a toothpick inserted into the muffins comes out clean.
And ready!! They are delicious and are great for breakfast or a snack.
The recipe makes about 12 medium muffins or 18 small ones.
