After this time, we spread the dough with the roller and cover with it a ribbed mold with a removable base. We pass the roller around the edge and remove the excess dough. Prick several times with a fork and bake the base for 15 minutes in the oven preheated to 180ºC. Meanwhile, we grate the cheese, cut the ham into small cubes, fillet the mushrooms and lightly brown them in a pan so that they lose their water. In a large bowl, beat the eggs and mix them with the cream and milk, salt, pepper and a pinch of nutmeg. On the base of the cake we put the raw ham or the bacon or the bacon passed through the pan, the cheese and the mushrooms. On them we pour the cream and egg mixture, letting everything soak up well. Finally, we bake the quiche at 180º for 30 or 40 minutes or until the filling is set and the dough is golden. Serve hot.
