Although in Spain the quiche seems to us a sophisticated dish, and even complex to make, the truth is that the French equivalent to our potato omelette: a handy elaboration, which serves as a wild card for a simple and family dinner. And it is, in fact, much easier to make than an omelette.
Quiche is nothing more than a type of savory cake made from beaten eggs, liquid cream and other products such as vegetables, meats, etc. with which a mold of broken dough that is baked in the oven is filled. The filling admits infinite varieties, which makes the quiche a very popular dish that adapts to the tastes and diets of the majority.
Although to make the perfect quiche we can roll the blanket over our heads and make our own dough, nowadays they sell good broken doughs in supermarkets with which we remove the only complex part of the preparation of the recipe. The origin of the quiche is in the Lorraine region, in the northeast of France, where the most famous of all the existing varieties comes from: the quiche lorraine. We start by preparing the shortcrust dough. We make a volcano with the flour, add the butter cut into cubes and we combine everything until we get a homogeneous dough. It is not convenient that we knead too much so that we do not have a too hard dough. We make a ball, wrap it with plastic wrap and store it in the refrigerator for half an hour. After this time, we spread the dough with the roller and cover with it a ribbed mold with a removable base. We pass the roller around the edge and remove the excess dough. Prick several times with a fork and bake the base for 15 minutes in the oven preheated to 180ºC. Meanwhile, we grate the cheese, cut the ham into small cubes, fillet the mushrooms and lightly brown them in a pan so that they lose their water. In a large bowl, beat the eggs and mix them with the cream and milk, salt, pepper and a pinch of nutmeg. On the base of the cake we put the raw ham or the bacon or the bacon passed through the pan, the cheese and the mushrooms. On them we pour the cream and egg mixture, letting everything soak up well. Finally, we bake the quiche at 180º for 30 or 40 minutes or until the filling is set and the dough is golden. Serve hot.
