I don’t know if it happens to you too, but I, when it comes time for dinner, I find myself so tired after dancing all day, early in the morning, that it is hard for me to start with her. For this reason, I am always looking for and capturing recipes that solve the last meal of the day without complications and these 13 simple dinner recipes meet that requirement.
Each and every one of these recipes has been published in Direct to the palate and you can find them in the links that accompany them, if you want to read the original entries for more information. However, I think that having them all together in the same entry will make it easier for all of us to consult you in times of need. Having said that, let’s go with our proposals for 13 simple dinners.
1. Ham and potato cannelloni
Ingredients for 4 people: 1 sachet of 125 g of dehydrated potato flakes, 200 ml of milk, 200 ml of water, 50 g of butter, 8 slices of York ham, 200 g of pate, 350 g of homemade tomato sauce, grated cheese for gratin , salt and pepper.
Elaboration: We start by preparing a thick mashed potatoes following the manufacturer’s instructions. Once ready, we add the butter. We spread the eight slices of ham and spread them with the pate, only at one end. On the pate, we put a couple of tablespoons of mashed potatoes. Fold one end of the ham slice over the mashed potatoes and roll it up to the opposite end. Spread the base of four oven dishes with tomato sauce, place the ham cannelloni on top, pour the rest of the tomato sauce over them, sprinkle with grated cheese and bake at 200ºC until the cheese melts and browns.

2. Mussels with butter and Indian touch
Ingredients for 2 people: 12 good-sized mussels, 60g butter, 1 tablespoon curry powder, salt and chopped chives.
Elaboration: We clean the mussels under the tap, rubbing their exterior to remove adhesions and stones and removing the beards that appear. We put them on the fire with 50 ml of water, in a covered pan, until they open. They will not take more than 5 minutes. Once ready, we remove the mussels from the casserole and finish opening them, forcing the shell and removing one of the two. We place them in the source in which we are going to serve them. In a pan, melt the butter, add the curry and stir. Pour over the mussels and decorate with chopped chives.

3. Easy zucchini, bacon and onion tart
Ingredients for a round mold 22 centimeters in diameter: 1 shortcrust tart, pizza or puff pastry dough, 3 medium onions, peeled and chopped, 2 small zucchini cleaned and chopped, 3 tablespoons olive oil, 1 clove of garlic, peeled and minced, 1 handful of smoked bacon chopped, 1 small glass of liquid cream, 1 handful of grated cheese and a little salt.
Elaboration: Heat in oil in a saucepan and fry the garlic, bacon and onion, over low heat, for a few minutes. Season and add the zucchini. We poach slowly for 30 minutes, then we turn up the heat so that they caramelize. We grease the mold, line it with the broken dough and fill it. We sprinkle the surface with the cream and sprinkle with the grated cheese. We bake in a preheated oven at 200ºC for approximately 15 minutes.

4. Avocado and Emmental Cheese Quesadillas
Ingredients for 2 people: 4 wheat tortillas, 1 ripe avocado, 1 large tomato, 2 tablespoons of fresh parsley or cilantro, 2 teaspoons of hot sauce (optional), juice of 1/2 lemon, 2-4 tablespoons of grated Emmental cheese, granulated garlic, black pepper, salt, extra virgin olive oil.
Elaboration: Open the avocado in half, remove the bone and extract the meat. Smash it with a fork, season with a few drops of lemon juice and season. Spread it on two of the quesadillas with the help of a butter knife. Chop the tomato, removing the seeds, into small pieces. Spread it on top of the avocado. Add chopped parsley or cilantro and a little hot sauce to taste. Finish with the grated cheese and season with granulated garlic and an extra touch of pepper. Cover with the other two tortillas and press well, gently. Heat a little olive oil in a good nonstick skillet and cook one quesadilla at a time over medium heat. Heat for about 5 minutes, making sure they do not burn, turn and brown on the other side. Cut into four parts and serve with sauce to taste.

5. Scrambled eggs with blood sausage with raisins and pine nuts
Ingredients for 4 people: 1/2 Burgos blood sausage, 3 eggs, 30 muscat type raisins or similar (seedless) and a handful of pine nuts
Elaboration: We soak the raisins in hot water for a few minutes. Cut the blood sausage in half and remove the skin. We crumble it in a pan and sauté it until it changes color and darkens. Then we add the raisins, drained, and the pine nuts, stirring until they are well distributed. We beat the eggs and pour them over the blood sausage, stirring quickly to integrate it with the other ingredients, preventing it from getting too curdled. Remove from the heat and serve in a casserole to take to the table or assemble some snacks or toasts.

6. Bagel pizza
Ingredients for 4 people: 4 bagel rolls, 1 buffalo mozzarella ball, 8 tablespoons of fried tomato, bolognese sauce, canned mushrooms, oregano and a drizzle of olive oil. For the Bolognese sauce: 1 carrot, 400 g of minced meat, 1/2 onion, 2 tablespoons of tomato concentrate, 1 glass of water and 100 ml of wine.
Elaboration: To make the bolognese, we chop the carrot and onion in brunoise and fry them with the minced meat for 5 minutes. Add the tomato and wine, let it reduce. Add the glass of water and cook for 30 minutes until obtaining an almost dry sauce with the pieces of minced meat compacted together. We open the bagels and toast them. Spread a teaspoon of fried tomato on each half of the bagel and distribute small pieces of mozzarella cut into pinches by hand. Spread the Bolognese sauce that we are going to use over the cheese and place four pieces of mushroom on each bagel half. Sprinkle with oregano and add a thread of extra virgin olive oil. Gratin 3 or 4 minutes and serve hot.

7. Tomato tarte tatin and fresh goat cheese
Ingredients for a 24 centimeter diameter mold: 1 sheet of refrigerated shortcrust pastry, 6 tomatoes, 150 g of fresh goat cheese, 4 teaspoons of old-fashioned mustard, fresh basil, 2 tablespoons of olive oil, salt and pepper.
Elaboration: We preheat the oven to 180 degrees with heat up and down. Grease a baking dish with one of the tablespoons of olive oil and arrange the sliced computer tomatoes. We salt and pepper them, add the rest of the oil on top and bake them for 20 minutes. Remove the pan from the oven and spread the crumbled fresh goat cheese on top of the tomatoes together with the mustard. Cover with the broken pasta tucking the excess edges inwards. We bake for 30 minutes. Once the time has passed, we let it rest for 10 minutes before unmolding (the tomatoes must be on top). Sprinkle with fresh basil and serve.

8. Sandwich club
Ingredients for 2 people: 4 slices of sliced bread, 3 slices of bacon, 3 slices of York ham, 1 slice of melting cheese, 1 slice of Emmental cheese, 1/2 filleted chicken breast, a tablespoon of mayonnaise, 1/2 tomato, 1 fresh lettuce leaf and butter.
Elaboration: We start by preparing a mixed sandwich by placing the slices of York ham between the two varieties of cheese and these between two slices of bread lightly buttered. We toast over a very low heat so that the cheeses melt. Meanwhile, we make the bacon and the chicken on the grill. With these two ingredients we make a second sandwich that we also brown, lightly butter the bread. As a connecting element between the two sandwiches that we have made, we spread the top of one of them with mayonnaise, cover it with pieces of lettuce and tomato slices and cover it with the other sandwich. We cut the sandwich into four triangles and skewer them.

9. Mini express egg pizzas with Serrano ham
Ingredients for 4 people: 4 corn or wheat tortillas, 4 eggs, 4 tablespoons of homemade fried tomato sauce, a handful of spinach or watercress sprouts, 8 tablespoons of Gruyère cheese, 8 slices of Serrano ham, salt and pepper.
Elaboration: We preheat the oven to 180ºC. In a refractory tray we place the four wheat or corn tortillas, spread a tablespoon of fried tomato on each of them. Spread the spinach or watercress sprouts over the tomato and crack an egg in the middle of the pancake. Season and distribute the cheese around the egg. Bake for 10-12 minutes and add two slices of Serrano ham to each pancake just before serving.

10. Camembert cheese stuffed with nuts
Ingredients for 4 people: 1 250g camembert cheese, 50g of mascarpone cheese, 25g of dried cherries and 25g of walnuts (without shell).
Elaboration: We hydrate the raisins by putting them in water and heating them in the microwave, at full power, for a minute. We cut the upper part of the camembert cheese, as if it were a lid. We empty the cheese, trying not to damage the base or the edges. Mix the camembert with the mascarpone and stir until a homogeneous mass is obtained. We may have to warm it up a bit for it to bind better. Chop the walnuts and add them, along with the drained raisins, to the cheese mixture. We stuff the camembert and cover it with its crust. We place it in an oven-safe container and bake it for 10 minutes at 140ºC.
