Black garlic risotto with crunchy Parmesan

  • Ingredients for two people: 100 g of onion, 700 ml of vegetable broth, 10 cloves of black garlic, 40 g of butter, 60 g of Parmesan cheese, 200 g of arborio or carnaroli rice, 1 lime, 50 ml of dry white wine and salt (optional ).

  • Elaboration: Grate the Parmesan cheese and prepare the crunchy ones by placing four small mounds on a baking tray covered with a silpat or parchment paper. Bake at 180ºC for 5 minutes or until they start to brown. Let cool until serving time. We crush the garlic cloves together with the vegetable broth, transfer it to a saucepan and keep it warm over a very low heat while we continue preparing the rest of the ingredients. The next thing will be to peel and cut the fine brunoise onion and fry it in a saucepan using half of the butter as fat. When the onion is translucent, add the rice, stir and fry for a minute. Next we add the white wine, increase the power of the fire and let the alcohol evaporate before starting to add the broth. We will do this saucepan by saucepan, without adding the next until the rice has absorbed all the liquid. We stir throughout the process so that the rice releases its starch and binds the grains, turning it into a creamy bite. At 18 minutes our risotto will be almost ready and we will only have to add the grated Parmesan cheese and the rest of the butter. We stir, adjust the salt level if we consider it necessary and let it rest for a few minutes before serving with the crunchy Parmesan and lime zest all over the surface.

  • Ingredients for four people: 350 g of noodles, 250 g of mushrooms, 100 g of garlic, 2 cloves of black garlic, 250 ml of liquid cooking cream, 120 ml of white wine, dried thyme, dried rosemary, ground black pepper, salt and oil of extra virgin olive.

  • Elaboration: Clean the mushrooms from possible soil and also wash the garlic sprouts. Cut the mushrooms into quarters or slices and chop the second ones into thin slices. Finely chop the black garlic cloves. Cook the pasta in plenty of salty water following the manufacturer’s instructions to leave it al dente. Save the cooking water once drained and heat a little olive oil in a large pan or casserole and brown the seasoned mushrooms over high heat until they turn color. Add rosemary and thyme to taste, add the black garlic and sauté for a couple of minutes. Add the garlic and cook for about 6-8 minutes. Add a splash of white wine, let the alcohol evaporate and cover with a glass of the cooking water for the pasta. When it has reduced, add the cream and stir well. Lower the heat and let it reduce for about 3 minutes. Rectify with salt.

  • Ingredients for 300 grams: 4 cloves of black garlic, 1 clove of common garlic, 1 egg, 200 ml of sunflower oil, 100 ml of extra virgin olive oil, salt, ground black pepper and the juice of half a lemon.

  • Elaboration: We peel the black garlic cloves carefully, they are very delicate, tender and a bit sticky so they should be handled gently. We peel the common garlic clove and remove the germ, cutting it in half lengthwise and extracting it with the tip of a knife. Place all the garlic in the glass of a hand mixer and add the egg, salt and pepper to taste. Pour in the sunflower oil and place the arm of the mixer inside, touching the base. Beat at low speed without lifting until the mixture begins to emulsify. Add the extra virgin olive oil, beat again, add the lemon juice and beat one last time.

  • Ingredients for two people: 300 g of white canned cooked beans, 33 cloves of black garlic, 3 leaves of fresh sage in leaves, 30 ml of tomato sauce, 4 fresh white pork sausages (from the butcher shop), sweet or hot paprika to taste, black pepper ground, salt and extra virgin olive oil

  • Elaboration: Heat the bottom of a casserole or pot with a good jet of extra virgin olive oil and add the chopped black garlic cloves and the sage leaves. Let the aromas release without raising the temperature too much, waiting for the leaves to remain crisp if we use them fresh. Add the white beans and part of their cooking liquid, or a little water or broth. Add the tomato and stir so that they take on the flavors of the casserole. Salt and pepper and cover with water or broth, without leaving it too liquid, since they will not suck much more. Bring to a boil, cover and simmer 25-30 minutes. Meanwhile remove the skin from the sausages, chop them and add them to the casserole at the end of cooking. Cook the whole uncovered until the sausage is cooked, adjusting the amount of liquid to taste. Serve with hot or sweet paprika on top.

  • Ingredients for four people: 4 flat pitta breads (Lebanese), 200 g of tomato sauce, 50 g of goat cheese, 1 aubergine, 16 grapes, 30 g of black garlic honey, Modena vinegar, salt and extra virgin olive oil

  • Elaboration: We slice the aubergine into 24 thin discs and sprinkle them with salt. We let the aubergine sweat for an hour before drying it with absorbent paper. Brush each aubergine disk with extra virgin olive oil and place them on the hot plate, with the greased side on the bottom. We mark the aubergine discs over medium heat until they begin to brown. We brush them with extra virgin olive oil again and turn them over. We mark the opposite side for a few more minutes. Meanwhile, we spread the tomato sauce among the four pita breads and spread it well over the entire surface. We cut the goat cheese into discs and the discs into small pieces. We cut the grapes in half. We cover the loaves with the aubergine discs, we distribute the cheese and the grapes among them. We cook them in the oven for 5 minutes at 180 ºC. We mix the honey and the balsamic vinegar and with it we water each fake pizza before serving it.

Vegetarian Avocado Black Garlic Dip

  • Ingredients for people: 1 tomato, 1 ripe avocado, 100 g of red onion, 1 bunch of fresh coriander, 5 g of lemon juice, 2 cloves of black garlic, 2 g of ground chili, salt and ground black pepper.

  • Elaboration: We scald the tomato to be able to peel it better. We make a cross-shaped cut at the base and immerse it in a saucepan with boiling water for 30 seconds, transfer it to a bowl with ice water and let it cool. We peel the tomato and cut it into small cubes. We drain them well over a colander so that they release all their juice. Peel the onion and finely chop it. We place it in a deep container together with the drained tomato. Chop the leaves of about 10-12 coriander branches and add them together with the ground chili, the lemon juice and the crushed black garlic. Add the avocado meat and mash with a fork while mixing well. Season to taste and that’s it.   • Ingredients for a hamburger: 180 g of minced beef, 1 clove of black garlic, salt, watercress, lamb’s lettuce, hamburger bun and a little butter. For the black garlic sauce (enough for 10 hamburgers): 250 ml of cream and 1 head of black garlic.

  • Elaboration: Chop the black garlic clove and mix it by hand with the hamburger meat, so that it is well distributed. Then we make a ball and flatten it slightly with the palm of the hand, to make the shape of the hamburger without weighing it down. We let the burger rest at room temperature for 30 minutes. To make the sauce, cook the black garlic in liquid cream for 10 minutes and crush, pouring the sauce into a bottle. We toast the hamburger bun previously buttered. We make the hamburger on the grill or grill, letting it cook for 3 minutes on each side. If you have the opportunity to cook it on the barbecue grill, it will have a delicious smoked flavor that will suit it perfectly. Assemble the burger by putting watercress and lamb’s lettuce on the toasted bread base and place the burger on them when it is at the desired point.
